General information
We make every effort to ensure that our recipes and instructions are accurate and easy to follow. However, results can vary depending on your ingredients, equipment, altitude, and technique. Use your own judgment when cooking, and adjust times and temperatures as needed.
Food safety
Always follow safe food-handling practices: wash your hands and surfaces often, keep raw meat and seafood separate from ready-to-eat foods, refrigerate perishables promptly, and cook food to safe internal temperatures. Commonly recommended minimum internal temperatures include:
- Poultry (whole, pieces, and ground): 165°F (74°C)
- Ground beef, pork, and lamb: 160°F (71°C)
- Beef, pork, veal, and lamb steaks, roasts, and chops: 145°F (63°C), followed by a 3-minute rest
- Fish and shellfish: 145°F (63°C), or until the flesh is opaque and separates easily
Follow the food safety guidance from authorities in your country, and use a food thermometer when in doubt.
Allergies and dietary needs
Many Asian recipes include common allergens such as soy, wheat (gluten), sesame, peanuts, tree nuts, fish (including fish sauce), shellfish, eggs, and dairy. Ingredient formulations vary by brand, so always read product labels carefully. If you have a food allergy, intolerance, or medical condition, consult a qualified healthcare professional before trying new recipes. We cannot guarantee that any recipe is free from allergens.
Nutrition information
Nutrition information is an estimate per serving, calculated from each recipe’s listed ingredient quantities using standard values from the USDA FoodData Central database. Optional garnishes and side dishes served alongside are not included, and for fried foods only the oil likely to be absorbed is counted. Actual values vary with the brands, quantities, and substitutions you use, so nutrition information should not be relied on for medical or dietary decisions.

A note on authenticity
Most dishes have countless regional and family variations. Our recipes reflect one way of making each dish, sometimes adapted for ingredients that are easier to find outside Asia. Where we adapt a recipe, we aim to say so and explain why.
